Lemon Bars With Raspberries

Ingredients

Nonstick spray coating
3/4 cup all-purpose flour
3 tbsp sugar
1/4 cup margarine or butter
1 egg
1 egg white
2/3 cup sugar
2 tbsp all-purpose flour
1 tsp finely shredded lemon peel (set aside)
2 tbsp lemon juice
1 tbsp water
1/4 tsp baking powder
1-1/2 cups fresh raspberries
2 tbsp red currant jelly, melted

Preparation

1. Spray an 8X8X2-inch baking pan with nonstick coating. Set aside. In a small mixing bowl combine the 3/4 cup flour and the 3 tablespoons sugar. Cut in margarine or butter until crumbly. Pat mixture onto the bottom of the prepared pan. Bake in a 350° oven for 15 minutes.

2. For filling, in a small mixing bowl combine egg and egg white. Beat with an electric mixer on medium speed until frothy. Add the 2/3 cup sugar, the 2 tablespoons flour, the lemon juice, water, and baking powder. Beat on medium speed for 3 minutes or until slightly thickened. Stir in lemon peel. Pour over hot baked layer in pan. Bake in a 350° oven for 20 to 25 minutes more or until edges are light brown and center is set. Cool completely in pan on a wire rack. Cut into 9 squares; cut each square diagonally to make a triangle. Top triangles with raspberries. Drizzle with the jelly.
