Roasted Herb Potatoes

Ingredients

1/3 cup Dijon Mustard
2 tbsp olive oil
1 clove garlic, finely chopped
1/2 tsp dried Italian seasoning
6 medium red-skinned potatoes (2 pounds), cleaned and cut into chunks

Preparation

1. Mix all ingredients except potatoes in small bowl.

2. Place potatoes in greased 13x9x2-inch baking pan; pour mustard mixture over and toss.

3. Bake at 425°F for 35 to 40 minutes or until potatoes are fork tender, stirring occasionally.
